Spiced Chicken Wrap

Last week, I had so many assignments to do, I mean, in short, it was a busy-rough week! So, whenever time isn't on my side, I try to cook easy and less time consuming foods! Well, this is a sort of irony though, because the Spiced Chicken Wrap recipe does actually take a little bit of refrigerating time, but it's all worth it! It has a very subtle taste, and you know what, it's perfect for children's breakfast! Im not much of an eater, but with this wrap, in just a matter of minute, my plate was clean! Shining like it had just been washed!

Happy Grilling!

Equipment:

  • Grilling / Frying Pan
  • Measuring spoons (not necessarily)

Ingredients:

For the Marinade:
  • 200g of chicken breasts
  • 2 cardamom pods
  • ¼ tsp of ground ginger
  • ½ tsp of coriander powder
  • ¼ tsp of cinnamon powder
  • Pinch of grated nutmeg
  • 2 garlic cloves
  • Some fresh coriander - chopped
  • ½ the juice of a lemon
  • 2 tbsp of olive oil
  • Salt & Pepper
  • Chilli powder - as per your taste

For the finishing:
  • Tortilla wraps
  • Lettuce
  • Chilli Sauce/BBQ sauce (I used a lemon & herb sauce)

Method:

Using a mortar and pestle, crush all the spices together, (cardamom pods, ground ginger, coriander powder, cinnamon powder, grated nutmeg, garlic, coriander, lemon juice, olive oil, salt and pepper).

After cutting the chicken breasts in small slices, combine all the ingredients for the marinade, coat well and let refrigerate for upto 2 hours.

Place the marinated chicken breasts on a grilling pan, and let each side char.

Remove from the grill pan and place in a plate.

Using the same grilling pan, let the tortilla wrap grill for a few seconds until lightly brown on both sides.

Add the lettuce to the wrap on the extreme left or right (which I forgot to do in a hurry). Then add the
chicken.

Fold over the bottom of the wrap to the top.

Then take one side of it and start rolling!

That's it you're done!

Happy Eating!

Note:
  • You can always bar the lettuce leaves and use chopped coriander instead.
