Chocolate Pudding

"A cyclone warning class 2 is in force in Mauritius." - Not a pleasant announcement to hear is it? 
(For those thinking about which cyclone Im referring to - I've run a bit late in posting the recipe!)


Nature at its most ferocious does not give the very best sense of enjoyment! 


The sound of heavy rain hitting against the window lashed by strong winds, the sight of the flooded ground and the feel of the chilly weather only tell that there's no stepping out and you already know it - its the perfect time to bake something and enjoy every bit of it under the warm quilt! 


Delightfully Decadent and Delicious Chocolate Pudding Cake!


Since I was craving for some chocolate pudding for a while and that it is one of the easiest dessert to bake, my search ended right there, I had nothing more to think of! 



Honestly, it took me under less than 30 minutes to prep and bake and most probably eat my share!! 





Equipment:

  • Kitchen Scale
  • Measuring Spoon
  • Pan/Bowl or Double Boiler or Bain Marie
  • 2 or 3 Ramekins (depending on size)
  • Whisk or Hand Mixer


Ingredients:

  • 50g of Dark Chocolate, broken into pieces
  • 1 Egg separated into yolk and white
  • 1 Egg beaten
  • 2 Tbsp of Caster Sugar
  • 2 Tsp of All-Purpose Flour
  • Butter to grease/Sugar to Sprinkle
  • Cream to Serve (Recommended!)
Serves 2 

Method:
  • Preheat oven to 200˚C/400˚F. Butter ramekins and sprinkle some sugar to coat.
  • In a bowl set over a pan of simmering water (double boiler/bain marie), toss in the chopped chocolate.
  • Let chocolate soften and as soon as you notice the edges start to melt and that the chocolate look shiny, stir until completely melted. 
  • Leave aside to allow cooling.
  • In another bowl, beat sugar and yolk until pale and fluffy.
  • Beat egg white until soft peaks form.
  • Add the beaten egg (the whole one) to the melted chocolate, followed by the beaten egg yolk and then the flour.
  • Ultimately fold the beaten egg white into the chocolate mixture. Make sure you keep the maximum amount of air.
  •  Transfer the mixture into the ramekins.
  • Let bake for approx. 15 minutes or until a skewer inserted in the middle comes out clean, or the pudding is spongy to the touch.
  • Drizzle cream on top and serve right away!

Easy Peasy Right?! Enjoy!!
