Passion Fruit Curd

It's been days since another good friend of mine, Adonie, gave me some passion fruits - she knows just how exactly I am crazy about passion fruits! Instead of eating them or baking the regular passion fruit cake, I decided to make passion fruit curd with them! Passion fruit is perfect for spreading onto toasts, breads, use it for pavlova, however you like it! The taste is incredibly tangy and sweet at the same time! The perfect combination of sweetness and tanginess, you know! There's quite a lot of fat in there though! I'm hoping my boyfriend doesn't read this because he is a health freak!

As to those of you who like passion fruit, this is the perfect spread, dessert, topping, like I said its however you like it!

Equipment:
  • Kitchen Scale
  • Stove
  • Whisk

Ingredients:
  • 160g / 7 passion fruits (the pulp)
  • 125g of sugar
  • 2 eggs
  • 2 egg yolks
  • 100g of unsalted butter






Method:



  • Put the pulp of the passion fruit in a bowl and with a whisk, give a stir to loosen the seeds from the pulp. Set aside.




  • Beat the egg yolks and eggs using a whisk.
  • Add the sugar and beat for another minute.




  • In a saucepan, melt the butter on low heat.
  • Add the butter in thin stream to the egg-sugar mixture, making sure you keep on stirring/whisking along. (You might want to seek help here, or just add the butter little by little yourself)
  • Bring this mixture back to the saucepan and let simmer on low heat.
  • Add the passion fruit pulp.
  • Let cook until the mixture thickens and coat the back of a spoon.




  • Allow to cool and then refrigerate until ready to serve.
