Crab Cakes with Mango Dipping Sauce

One of my favourite appetiser is the Thai Style Salmon Fish Cakes with Mango Salsa! And if you have ever tried it, then you will definitely like the Crab Cakes with Mango Dipping Sauce which is adapted from the former one!

It all started with my mother buying Petit Navire's Rillettes au Crabe [Potted Crab Meat] and nobody has had the guts to use it for spreading, or for anything for that matter! And as I had some beautiful and colourful coriander and scallions and along one large ripe mango at home, nothing other than making crab cakes sprang up to the mind!

Of course, if you are not a big fan of crab meat, you can always substitute for tuna flakes and/or cheese, [A friend of mine, tried it one and told me it worked fine - with regards to the Salmon Fish Cakes]

Equipment:
  • Kitchen Scale
  • Measuring Spoons
  • Frying Pan for Deep Frying
  • Hand blender or regular blender


Ingredients:

1. For the Crab Cakes:
  • 125g potted crab meat
  • 250g of cooked and mashed potato
  • 1 garlic clove, chopped
  • 4 spring onions, chopped
  • 1 handful of chopped coriander
  • 1 tbsp of mayonnaise
  • 1/4 tsp of worcestershire sauce
  • 2 eggs beaten [1 for incorporating into the crab cake, and one for coating!]
  • Salt and Pepper to taste
  • 40g of all-purpose flour
  • 100g of breadcrumbs
  • Vegetable oil, for frying
2. For the Mango Dipping Sauce:
  • 1 large ripe mango, pitted
  • 2 tbsp of coriander, chopped
  • 1 tsp of rice vinegar
  • 2 chillies
  • 1 tsp of honey
  • Juice of 1 lime


Method:

1. For the Crab Cakes:

  • Place mashed potato, potted crab meat, garlic, spring onions, coriander, half of the breadcrumb, 1 beaten egg, worcestershire sauce, mayonnaise, salt and pepper in a bowl. Using a fork, mix until well combined!
  • Let chill for atleast two hours or until firm enough to handle. [I skipped this part and yet managed to get round patties]
  • Put beaten egg in a bowl, all-purpose flour in another and breadcrumbs in another one.
  •  Spoon walnut-size crab meat balls, dip into the flour. 
  • Flatten to make patties. Then dip into beaten egg and finally into breadcrumbs.
  •  Gently fry the crab cakes for 2-3 minutes until golden brown on each side.

2. For the Mango Dipping Sauce:
  • Blend all the ingredients together until creamy.
  • Pour into small bowl and serve with Crab Cakes.
